Day 20: Camping Part 3

Today was a really fun day. The weather was perfect and the sun was shining! We hiked up to the Split Rock tourist center and saw the lighthouse up close with a tour and an enthralling 13 minute video. After that we “hiked” back to camp on the rocky beach but stopped for awhile by the shore to eat snacks and enjoy the sun and waves.

Food-wise, I have eaten the best meals on my Whole 30 during this trip. I was nervous going into it, but it turns out that when you camp you don’t have a lot to do with your time other than cook and relax.  I prepared and actually enjoyed my meals… a luxury I don’t necessarily have at home during the regular grind.

How I felt: Good! Vacation + Sun + Good Food = Awesome

What I ate:

Breakfast: scrambled eggs topped with leftover chili and guac, coconut milk coffee

Lunch / Snacks: dried apples and nut butter, beef stick, trail mix with dried cherries, fresh apple, pineapple

Dinner: Beef hot dogs with campfire roasted brussels and veggie packets. Roasted Bananas and apples with cinnamon and coconut oil (YUMMMMM!)
